Garlic Butter Shrimp Pasta – By Malsha – eLanka
Ingredients
- 8 oz (225g) spaghetti or any pasta of choice
- 1 lb (450g) shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 tbsp butter
- 4–5 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional, for a bit of heat)
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
- Juice of 1/2 lemon (optional, for extra flavor)
Instructions
- Cook the Pasta:
- Boil a large pot of salted water, add pasta, and cook according to package instructions. Once done, drain and set aside, reserving about 1/2 cup of pasta water.
- Cook the Shrimp:
- In a large skillet, heat olive oil over medium heat. Add shrimp, season with salt and pepper, and cook until pink and opaque (about 2-3 minutes per side). Remove the shrimp from the skillet and set aside.
- Make Garlic Butter Sauce:
- In the same skillet, melt butter. Add minced garlic and cook for 1 minute until fragrant (avoid browning). Add red pepper flakes if using.
- Combine Pasta and Shrimp:
- Return the shrimp to the skillet, add cooked pasta, and toss everything together. If the mixture is too dry, add a bit of the reserved pasta water until you reach the desired consistency.
-
Finish and Serve:
- Sprinkle with Parmesan cheese, chopped parsley, and a squeeze of lemon juice. Serve warm, and enjoy!
