Cut them in half lengthwise and place them on a baking sheet, cut side up.<\/span><\/li>\n<li><span style=\"font-size: 16px; color: #000000;\">Brush with olive oil, then sprinkle with paprika, cumin, salt, and pepper.<\/span><\/li>\n<li><span style=\"font-size: 16px; color: #000000;\">Roast for 35\u201340 minutes, or until fork-tender.<\/span><\/li>\n<\/ul>\n<\/li>\n<li style=\"text-align: justify;\"><span style=\"font-size: 16px; color: #000000;\"><strong>Prepare the Filling:<\/strong><\/span>\n<ul>\n<li><span style=\"font-size: 16px; color: #000000;\">While the sweet potatoes are roasting, combine quinoa, chickpeas, sun-dried tomatoes, olives, red onion, and parsley in a large bowl.<\/span><\/li>\n<li><span style=\"font-size: 16px; color: #000000;\">Drizzle with a little olive oil and lemon juice, then mix well.
