Soak the Rice:<\/strong><\/span><\/h3>\n<ul data-start=\"802\" data-end=\"850\">\n<li data-start=\"802\" data-end=\"850\">\n<p data-start=\"804\" data-end=\"850\"><span style=\"color: #000000;\">Wash and soak raw rice in water for 4\u20135 hours.<\/span><\/p>\n<\/li>\n<\/ul>\n<h3 data-start=\"852\" data-end=\"879\"><span style=\"color: #000000;\"><strong>2. Make the Batter:<\/strong><\/span><\/h3>\n<ul data-start=\"880\" data-end=\"1086\">\n<li data-start=\"880\" data-end=\"900\">\n<p data-start=\"882\" data-end=\"900\"><span style=\"color: #000000;\">Drain soaked rice.<\/span><\/p>\n<\/li>\n<li data-start=\"901\" data-end=\"1027\">\n<p data-start=\"903\" data-end=\"930\"><span style=\"color: #000000;\">Grind it in a blender with:<\/span><\/p>\n<ul data-start=\"933\" data-end=\"1027\">\n<li data-start=\"933\" data-end=\"950\">\n<p data-start=\"935\" data-end=\"950\"><span style=\"color: #000000;\">Grated coconut,<\/span><\/p>\n<\/li>\n<li data-start=\"953\" data-end=\"967\">\n<p data-start=\"955\" data-end=\"967\"><span style=\"color: #000000;\">Cooked rice,<\/span><\/p>\n<\/li>\n<li data-start=\"970\" data-end=\"1027\">\n<p data-start=\"972\" data-end=\"1027\"><span style=\"color: #000000;\">Enough water (as needed for a smooth, pourable batter).<\/span><\/p>\n<\/li>\n<\/ul>\n<\/li>\n<li data-start=\"1028\" data-end=\"1054\">\n<p data-start=\"1030\" data-end=\"1054\"><span style=\"color: #000000;\">Grind until very smooth.<\/span><\/p>\n<\/li>\n<li data-start=\"1055\" data-end=\"1086\">\n<p data-start=\"1057\" data-end=\"1086\"><span style=\"color: #000000;\">Add sugar and salt. Mix well.<\/span><\/p>\n<\/li>\n<\/ul>\n<h3 data-start=\"1088\" data-end=\"1107\"><span style=\"color: #000000;\"><strong>3. Ferment:<\/strong><\/span><\/h3>\n<ul data-start=\"1108\" data-end=\"1388\">\n<li data-start=\"1108\" data-end=\"1155\">\n<p data-start=\"1110\" data-end=\"1155\"><span style=\"color: #000000;\">Pour batter into a large bowl (it will rise).<\/span><\/p>\n<\/li>\n<li data-start=\"1156\" data-end=\"1388\">\n<p data-start=\"1158\" data-end=\"1233\"><span style=\"color: #000000;\">Cover and let it ferment in a warm place for <strong data-start=\"1203\" data-end=\"1220\">8 to 12 hours<\/strong> (overnight).<\/span><\/p>\n<ul data-start=\"1236\" data-end=\"1388\">\n<li data-start=\"1236\" data-end=\"1388\">\n<p data-start=\"1238\" data-end=\"1388\"><span style=\"color: #000000;\">If you\u2019re using <strong data-start=\"1254\" data-end=\"1263\">yeast<\/strong>, dissolve it in 2 tbsp warm water + a pinch of sugar, wait 10 mins until frothy, then mix into the batter before fermenting.<\/span><\/p>\n<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h3 data-start=\"1390\" data-end=\"1416\"><span style=\"color: #000000;\"><strong>4. Before Cooking:<\/strong><\/span><\/h3>\n<ul data-start=\"1417\" data-end=\"1564\">\n<li data-start=\"1417\" data-end=\"1462\">\n<p data-start=\"1419\" data-end=\"1462\"><span style=\"color: #000000;\">Add baking soda (if using) and stir gently.<\/span><\/p>\n<\/li>\n<li data-start=\"1463\" data-end=\"1564\">\n<p data-start=\"1465\" data-end=\"1564\"><span style=\"color: #000000;\">The batter should be of pourable consistency, like pancake batter. Add a little water if too thick.<\/span><\/p>\n<\/li>\n<\/ul>\n<h3 data-start=\"1566\" data-end=\"1592\"><span style=\"color: #000000;\"><strong>5. Cook the Appam:<\/strong><\/span><\/h3>\n<ul data-start=\"1593\" data-end=\"1944\">\n<li data-start=\"1593\" data-end=\"1662\">\n<p data-start=\"1595\" data-end=\"1662\"><span style=\"color: #000000;\">Heat an <strong data-start=\"1603\" data-end=\"1617\">Appachatti<\/strong> (appam pan) or small wok. Lightly grease it.<\/span><\/p>\n<\/li>\n<li data-start=\"1663\" data-end=\"1707\">\n<p data-start=\"1665\" data-end=\"1707\"><span style=\"color: #000000;\">Pour a ladleful of batter into the center.<\/span><\/p>\n<\/li>\n<li data-start=\"1708\" data-end=\"1794\">\n<p data-start=\"1710\" data-end=\"1794\"><span style=\"color: #000000;\">Swirl the pan to spread batter in a circle \u2014 thin at the edges, thick in the center.<\/span><\/p>\n<\/li>\n<li data-start=\"1795\" data-end=\"1854\">\n<p data-start=\"1797\" data-end=\"1854\"><span style=\"color: #000000;\">Cover with a lid and cook on medium heat for 2\u20133 minutes.<\/span><\/p>\n<\/li>\n<li data-start=\"1855\" data-end=\"1944\">\n<p data-start=\"1857\" data-end=\"1944\"><span style=\"color: #000000;\">No flipping needed.
