During the island\u02bcs severe droughts in the 1970s, most of her family\u02bcs humble, home-cooked meals consisted of boiled jackfruit served in a clay pot with a handful of freshly grated coconut. This simple, carb-rich meal fused with natural fats fuelled enough energy for the farmer-family to toil day and night in the dry plains.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 20px; color: #000000;\">Today, Starbucks serves jackfruit in wraps, while Pizza Hut offers it as a topping. The London Evening Standard called jackfruit \u201cthe new kimchi, kale and cauliflower all rolled into one\u201d. Pinterest named it \u201cthe hottest food trend of 2017\u201d, and more recently, The Guardian declared it \u201ca vegan sensation\u201d thanks to its shredded meat texture.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 20px; color: #000000;\">But for my mother, her memories of growing up are studded with her eldest sister\u02bcs myriad jackfruit dishes. She\u02bcs particularly fond of kiri kos, a creamy jackfruit curry cooked in coconut milk. For kiri kos, my aunt plucked unripe jackfruits. Decades later in the early 2000s, it was the same tree that pleased my jackfruit cravings as a child. My mother recalls the days where I sat side by side with her as she removed and discarded the sticky white sap \u2013 koholla, as she called it in Sinhala \u2013 from ripe jackfruit, gobbling up each yellow, egg-like pod.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 20px; color: #000000;\">This humble fruit has been revered by Sri Lankans, as it has repeatedly saved the <\/span><span style=\"font-size: 20px; color: #000000;\">island from starvation <\/span><span style=\"font-size: 20px; color: #000000;\">creamy jackfruit curry cooked in coconut milk. For kiri kos, my aunt <\/span><span style=\"font-size: 20px; color: #000000;\">plucked unripe jackfruits. Decades later in the early 2000s, it was the <\/span><span style=\"font-size: 20px; color: #000000;\">same tree that pleased my jackfruit cravings as a child. People in the West often <\/span><span style=\"font-size: 20px; color: #000000;\">describe it as \u201cstinky\u201d, but for me, <\/span><span style=\"font-size: 20px; color: #000000;\">other Sri Lankans and those living between many parts of India and the <\/span><span style=\"font-size: 20px; color: #000000;\">rainforests of Malaysia where the fruit naturally grows, this seasonal smell <\/span><span style=\"font-size: 20px; color: #000000;\">of ripe jackfruit brings immense joy.<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">Jackfruit is the world\u02bcs largest tree-borne fruit and it has a spiky skin that <\/span><span style=\"font-size: 20px; color: #000000;\">changes colour from green to yellow as it ripens. We use unripe jackfruit <\/span><span style=\"font-size: 20px; color: #000000;\">in our cooking and eat the ripe fruit raw, just as we eat a ripe mango or an<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">apple. While the West is now touting it as an ethical meat alternative, for <\/span><span style=\"font-size: 20px; color: #000000;\">centuries, this humble fruit has been revered by Sri Lankans, as it has <\/span><span style=\"font-size: 20px; color: #000000;\">repeatedly saved the island from starvation.<\/span><\/p>\n<p><img loading=\"lazy\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-51037 aligncenter\" src=\"https:\/\/websitedesigns.com.au\/elankanew\/wp-content\/uploads\/2020\/10\/jackfruit-1.png\" alt=\"\" width=\"500\" height=\"281\" \/><\/p>\n<p style=\"text-align: center;\"><span style=\"color: #000000;\"><strong>Jackfruit is the world&#8217;s largest tree-borne fruit and mature trees produce 200 fruits each year<\/strong><\/span><br \/>\n<span style=\"color: #000000;\"><strong>(Credit: Utopia_88\/Getty Images)<\/strong><\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 20px; color: #000000;\">Across Sri Lanka, the jackfruit tree is known as bath gasa (\u201crice tree\u201d). Sri <\/span><span style=\"font-size: 20px; color: #000000;\">Lankans are rice eaters and pre-colonial Sri Lanka took pride in the <\/span><span style=\"font-size: 20px; color: #000000;\">country\u02bcs vast reservoirs and irrigation canals that harnessed monsoon<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">rains, suppling water for paddy cultivation. But when British forces <\/span><span style=\"font-size: 20px; color: #000000;\">occupied the island starting in 1815 and subsequently stripped farmers <\/span><span style=\"font-size: 20px; color: #000000;\">of their land, they made it difficult for islanders to grow rice and instead <\/span><span style=\"font-size: 20px; color: #000000;\">expanded plantation crops such as tea, rubber and cinnamon for their <\/span><span style=\"font-size: 20px; color: #000000;\">export gains.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-size: 20px; color: #000000;\">In 1915, a member of Sri Lanka\u02bcs independence movement named Arthur <\/span><span style=\"font-size: 20px; color: #000000;\">V Dias, who had been sentenced to death by the British for his perceived <\/span><span style=\"font-size: 20px; color: #000000;\">role in an uprising, was freed from prison. Upon his release, Dias <\/span><span style=\"font-size: 20px; color: #000000;\">dedicated himself to helping Sri Lankans fight British rule and he realised <\/span><span style=\"font-size: 20px; color: #000000;\">that islanders would soon face food shortages as rice cultivation <\/span><span style=\"font-size: 20px; color: #000000;\">continued to decline. During his independence movement marches in Sri <\/span><span style=\"font-size: 20px; color: #000000;\">Lanka\u02bcs central highlands, he also saw the destruction of the island\u02bcs <\/span><span style=\"font-size: 20px; color: #000000;\">native jackfruit trees. A planter by trade, Dias imported jackfruit seeds <\/span><span style=\"font-size: 20px; color: #000000;\">from Malaysia and gathered healthy seeds for germination. He visited <\/span><span style=\"font-size: 20px; color: #000000;\">villages to distribute seedlings and mailed seeds to far-flung corners in <\/span><span style=\"font-size: 20px; color: #000000;\">the country. Over time, Dias\u02bc campaign paved the way to many <\/span><span style=\"font-size: 20px; color: #000000;\">successful jackfruit plantations across the country and earned him the <\/span><span style=\"font-size: 20px; color: #000000;\">heroic nickname of Kos Mama, or Uncle Jack.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-size: 20px; color: #000000;\">Today, Dias is considered a national <\/span><span style=\"font-size: 20px; color: #000000;\">hero, and like most Sri Lankan <\/span><span style=\"font-size: 20px; color: #000000;\">children, I first learned about Dias in a school textbook. His jackfruit <\/span><span style=\"font-size: 20px; color: #000000;\">campaign also helped establish food security in Sri Lanka during World <\/span><span style=\"font-size: 20px; color: #000000;\">War Two while nearby places such as Bengal and Vietnam experienced <\/span><span style=\"font-size: 20px; color: #000000;\">horrific famines in the 1940s. Amarasinghe explained that jackfruit was <\/span><span style=\"font-size: 20px; color: #000000;\">also known as the \u201cstarvation fruit\u201d in Sri Lanka during the 1970s, <\/span><span style=\"font-size: 20px; color: #000000;\">fleetingly transferring me to my mother\u02bcs memories of her childhood.<br \/>\n<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">In the 1970s, a combination of inflation, droughts and a food shortage <\/span><span style=\"font-size: 20px; color: #000000;\">pushed Sri Lanka to the verge of collapse. A 1974 New York Times article <\/span><span style=\"font-size: 20px; color: #000000;\">quotes Sri Lanka\u02bcs then-prime minister Sirimavo Bandaranaike as saying<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">Jackfruit has birthed a host of flavourful <\/span><span style=\"font-size: 20px; color: #000000;\">delicacies, and we welcome every bit of it <\/span><span style=\"font-size: 20px; color: #000000;\">into our diverse cuisine <\/span><span style=\"font-size: 20px; color: #000000;\">the dire economic situation has \u201calmost squeezed the breath out of us \u2013 <\/span><span style=\"font-size: 20px; color: #000000;\">we are literally fighting to survive\u201d.<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">But thanks to Dias\u02bc campaign in the early 1900s, people had jackfruit <\/span><span style=\"font-size: 20px; color: #000000;\">growing in their backyards. Amarasinghe explained that those saplings \u2013 <\/span><span style=\"font-size: 20px; color: #000000;\">which had become tall, fruit-bearing trees long before the 1970s \u2013 are <\/span><span style=\"font-size: 20px; color: #000000;\">what got people through the crisis.<\/span><\/p>\n<p><img loading=\"lazy\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-51040 aligncenter\" src=\"https:\/\/websitedesigns.com.au\/elankanew\/wp-content\/uploads\/2020\/10\/jackfruit-3.png\" alt=\"\" width=\"590\" height=\"332\" \/><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 20px; color: #000000;\">\u201cMy grandmother hailed from a well-to-do family, but the government <\/span><span style=\"font-size: 20px; color: #000000;\">only allowed them to purchase 2kg of rice for a week. During these years, <\/span><span style=\"font-size: 20px; color: #000000;\">it\u02bcs jackfruit that kept them fed,\u201d Amarasinghe told me.<\/span><\/p>\n<p><span style=\"font-size: 20px; color: #000000;\">Most recently, Amarasinghe says <\/span><span style=\"font-size: 20px; color: #000000;\">that jackfruit also became a staple <\/span><span style=\"font-size: 20px; color: #000000;\">during Sri Lanka\u02bcs months-long <\/span><span style=\"font-size: 20px; color: #000000;\">curfew to control Covid-19. During the initial weeks of the pandemic, <\/span><span style=\"font-size: 20px; color: #000000;\">many people in rural villages lost their incomes and it took weeks or even <\/span><span style=\"font-size: 20px; color: #000000;\">months for government welfare programmes to reach these remote <\/span><span style=\"font-size: 20px; color: #000000;\">hamlets. Without access to money or food, many villagers resorted to <\/span><span style=\"font-size: 20px; color: #000000;\">boiling jackfruit \u2013 just as my mother\u02bcs family did in the 1970s.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-size: 20px; color: #000000;\">But jackfruit isn\u02bct just a starvation fruit. The island\u02bcs deep love and <\/span><span style=\"font-size: 20px; color: #000000;\">gratitude for jackfruit has birthed a host of flavourful delicacies, and we <\/span><span style=\"font-size: 20px; color: #000000;\">welcome every bit of it into our diverse cuisine. Tender baby jackfruit <\/span><span style=\"font-size: 20px; color: #000000;\">without seeds go into a flavourful curry known as polos ambula. The <\/span><span style=\"font-size: 20px; color: #000000;\">curry\u02bcs labour-intensive process involves slow cooking the young fruit in <\/span><span style=\"font-size: 20px; color: #000000;\">a clay pot over an earthen fire for at least six hours. As the hours pass, <\/span><span style=\"font-size: 20px; color: #000000;\">the baby jackfruit slices simmer in a spice-infused coconut broth, <\/span><span style=\"font-size: 20px; color: #000000;\">soaking up the flavours of cloves, cardamom, dried tamarind and other<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">aromats.<\/span><\/p>\n<p><img loading=\"lazy\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-51041 aligncenter\" src=\"https:\/\/websitedesigns.com.au\/elankanew\/wp-content\/uploads\/2020\/10\/jackfruit-4.png\" alt=\"\" width=\"590\" height=\"331\" \/><\/p>\n<p style=\"text-align: center;\"><strong>Sri Lankans incorporate jackfruit into a wide variety of traditional dishes (Credit: Nathan<\/strong><br \/>\n<strong>Mahendra)<\/strong><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 20px; color: #000000;\">Ripe jackfruit pods are slimy and taste better with a sprinkle of salt. <\/span><span style=\"font-size: 20px; color: #000000;\">Seeds don\u02bct go to waste in our homes; we eat them boiled. When <\/span><span style=\"font-size: 20px; color: #000000;\">combined with a ground mix of pan-fried rice and shredded coconut, <\/span><span style=\"font-size: 20px; color: #000000;\">boiled seeds make for a dark curry called kos ata kalu pol maluwa. My <\/span><span style=\"font-size: 20px; color: #000000;\">mother loves seeds as a snack, smoking them over a charcoal fire. My <\/span><span style=\"font-size: 20px; color: #000000;\">favourite is my father\u02bcs kos ata aggala, pan-roasted and ground jackfruit <\/span><span style=\"font-size: 20px; color: #000000;\">seeds blended with scraped coconut, sugar and a hint of pepper that are <\/span><span style=\"font-size: 20px; color: #000000;\">formed into balls for sublime taste and a subtle crunch. He makes them<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">for evening tea when I\u02bcm home as a token of his love.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 20px; color: #000000;\">This jack-of-all-fruits\u02bc versatility runs beyond the kitchen. \u201cIt\u02bcs hard to <\/span><span style=\"font-size: 20px; color: #000000;\">think of another tree with so many uses,\u201d said Diwani Welitharage, a <\/span><span style=\"font-size: 20px; color: #000000;\">pharmacist who cooks with locally sourced ingredients in her spare time. <\/span><span style=\"font-size: 20px; color: #000000;\">Welitharage cites jackfruit trees\u02bc popularity as timber and the many uses <\/span><span style=\"font-size: 20px; color: #000000;\">of its leaves and flowers in Ayurvedic medicine to treat diabetes. Rich in <\/span><span style=\"font-size: 20px; color: #000000;\">carbs, jackfruit is also a good source of dietary fibre and vitamin C.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-size: 20px; color: #000000;\">Welitharage uses jackfruit flour in muffins and cakes, and fries sliced <\/span><span style=\"font-size: 20px; color: #000000;\">jackfruit pods into chips laden with sugar. Similarly, many Hela Bojun <\/span><span style=\"font-size: 20px; color: #000000;\">restaurants \u2013 an initiative by the Ministry of Agriculture allowing women to <\/span><span style=\"font-size: 20px; color: #000000;\">cook traditional Sri Lankan cuisine and earn a living \u2013 prepare kos kottu. <\/span><span style=\"font-size: 20px; color: #000000;\">Kottu, a popular street food and hangover cure, is a greasy mix of leftover <\/span><span style=\"font-size: 20px; color: #000000;\">flatbread, sliced vegetables, eggs and meat. His tender <\/span><span style=\"font-size: 20px; color: #000000;\">jackfruit cutlets, served with a homemade spicy chilli sauce, soon <\/span><span style=\"font-size: 20px; color: #000000;\">became a hit among the epicureans frequenting the restaurant.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 20px; color: #000000;\">Curious to see how jackfruit fares at hipster cafes, I visited the chic <\/span><span style=\"font-size: 20px; color: #000000;\">Colombo restaurant Cafe Kumbuk, which plates tacos with fried baby <\/span><span style=\"font-size: 20px; color: #000000;\">jackfruit alongside mango salsa and guacamole. \u201cLiving in Sri Lanka, I <\/span><span style=\"font-size: 20px; color: #000000;\">realised jackfruit is such a widely available, versatile fruit that can be <\/span><span style=\"font-size: 20px; color: #000000;\">cooked and enjoyed in so many ways,\u201d said cafe founder Shana <\/span><span style=\"font-size: 20px; color: #000000;\">Dandeniya, who returned to Sri Lanka a few years ago after growing up in <\/span><span style=\"font-size: 20px; color: #000000;\">the UK. \u201cTo me, it\u02bcs one of the greatest local superfoods we have access <\/span><span style=\"font-size: 20px; color: #000000;\">to, and we should champion it more.\u201d<\/span><\/p>\n<p><img loading=\"lazy\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-51043 aligncenter\" src=\"https:\/\/websitedesigns.com.au\/elankanew\/wp-content\/uploads\/2020\/10\/jackfruit-6.png\" alt=\"\" width=\"590\" height=\"335\" \/><\/p>\n<p style=\"text-align: center;\"><strong>This humble fruit is increasingly being served at upscale restaurants across Sri Lanka (Credit:<\/strong><br \/>\n<strong>Karel Bock\/Getty Images)<\/strong><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 20px; color: #000000;\">She is particularly fond of the pulled pork-like texture in cooked jackfruit <\/span><span style=\"font-size: 20px; color: #000000;\">and has plans to reintroduce a pulled jackfruit burger on the cafe\u02bcs menu <\/span><span style=\"font-size: 20px; color: #000000;\">following customer requests. \u201cIt\u02bcs great when slow-cooked and pulled; I<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">think it\u02bcs even better than pulled pork.\u201d<\/span><\/p>\n<p><span style=\"font-size: 20px; color: #000000;\">When I spoke to my mother again, she tempted me to visit my aunt in the <\/span><span style=\"font-size: 20px; color: #000000;\">village for a bowl of creamy white kiri kos cooked over a woodfire and <\/span><span style=\"font-size: 20px; color: #000000;\">enjoyed with a plate of hot rice and lemongrass-scented freshwater fish<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">curry. I can\u02bct recreate my aunt\u02bcs authentic flavours in my Colombo kitchen <\/span><span style=\"font-size: 20px; color: #000000;\">with a gas stove, but I can visit her and then see my father for a token of <\/span><span style=\"font-size: 20px; color: #000000;\">love that comes with his teatime kos ata aggala.<\/span><\/p>\n<p><span style=\"font-size: 20px; color: #000000;\">Tender jackfruit cutlets recipe (makes approximately seven)<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">Filling:<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">1 young jackfruit<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">100g potatoes<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">2 tbsp coconut oil<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">1 finely chopped onion<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">2 finely chopped garlic cloves<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">1 finely chopped green chilli<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">\u00bc tsp finely chopped ginger<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">\u00bd tbsp ground pepper<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">\u00bc tbsp chilli flakes<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">1 tbsp roasted curry powder<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">finely chopped 2 sprigs of curry leaves<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">salt to taste<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">Batter:<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">50g wheat flour<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">150ml water<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">pinch of turmeric<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">pinch of salt<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">150g breadcrumbs<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">Clean the young jackfruit, and then peel and cut it into medium-sized<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">chunks. Boil until soft, and mash.<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">Boil the potatoes, and then peel and mash them.<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">Heat the coconut oil in a shallow pan. Once the oil is hot, add onions, <\/span><span style=\"font-size: 20px; color: #000000;\">garlic cloves, green chilli, ginger, pepper, chilli flakes, roasted curry <\/span><span style=\"font-size: 20px; color: #000000;\">powder and chopped curry leaves. Saut\u00e9 until onions turn tender and <\/span><span style=\"font-size: 20px; color: #000000;\">light golden in colour. Add salt, the mashed jackfruit, and potatoes and <\/span><span style=\"font-size: 20px; color: #000000;\">stir well for five minutes. Switch off the heat. Once cool, shape the <\/span><span style=\"font-size: 20px; color: #000000;\">mixture into small balls about 1.5in in diameter.<\/span><br \/>\n<span style=\"font-size: 20px; color: #000000;\">Prepare the batter by whisking together the wheat flour, water, turmeric <\/span><span style=\"font-size: 20px; color: #000000;\">and salt.<\/span><\/p>\n<p><span style=\"font-size: 20px; color: #000000;\">Dip the balls in the batter and roll them in breadcrumbs. <\/span><span style=\"font-size: 20px; color: #000000;\">Heat a pan with oil and fry the cutlets until golden brown.
