My mother grew up in a house of eight people in Kurunegala, Sri Lanka, 100km north-east of Colombo. During the island\u02bcs severe droughts in the 1970s, most of her family\u02bcs humble, home-cooked meals consisted of boiled jackfruit served in a clay pot with a handful of freshly grated coconut. This simple, carb-rich meal fused with natural fats fuelled enough energy for the farmer-family to toil day and night in the dry plains.<\/span><\/p>\n

Today, Starbucks serves jackfruit in wraps, while Pizza Hut offers it as a topping. The London Evening Standard called jackfruit \u201cthe new kimchi, kale and cauliflower all rolled into one\u201d. Pinterest named it \u201cthe hottest food trend of 2017\u201d, and more recently, The Guardian declared it \u201ca vegan sensation\u201d thanks to its shredded meat texture.<\/span><\/p>\n

<\/p>\n

But for my mother, her memories of growing up are studded with her eldest sister\u02bcs myriad jackfruit dishes. She\u02bcs particularly fond of kiri kos, a creamy jackfruit curry cooked in coconut milk. For kiri kos, my aunt plucked unripe jackfruits. Decades later in the early 2000s, it was the same tree that pleased my jackfruit cravings as a child. My mother recalls the days where I sat side by side with her as she removed and discarded the sticky white sap \u2013 koholla, as she called it in Sinhala \u2013 from ripe jackfruit, gobbling up each yellow, egg-like pod.<\/span><\/p>\n

This humble fruit has been revered by Sri Lankans, as it has repeatedly saved the <\/span>island from starvation <\/span>creamy jackfruit curry cooked in coconut milk. For kiri kos, my aunt <\/span>plucked unripe jackfruits. Decades later in the early 2000s, it was the <\/span>same tree that pleased my jackfruit cravings as a child. My mother recalls <\/span>the days where I sat side by side with her as she removed and discarded <\/span>the sticky white sap \u2013 koholla, as she called it in Sinhala \u2013 from ripe <\/span>jackfruit, gobbling up each yellow, egg-like pod.

\nI loved the strong smell of the ripe <\/span>fruit. People in the West often <\/span>describe it as \u201cstinky\u201d, but for me, <\/span>other Sri Lankans and those living between many parts of India and the <\/span>rainforests of Malaysia where the fruit naturally grows, this seasonal smell <\/span>of ripe jackfruit brings immense joy.<\/span>
\nJackfruit is the world\u02bcs largest tree-borne fruit and it has a spiky skin that <\/span>changes colour from green to yellow as it ripens. We use unripe jackfruit <\/span>in our cooking and eat the ripe fruit raw, just as we eat a ripe mango or an<\/span>
\napple. While the West is now touting it as an ethical meat alternative, for <\/span>centuries, this humble fruit has been revered by Sri Lankans, as it has <\/span>repeatedly saved the island from starvation.<\/span><\/p>\n

Across Sri Lanka, the jackfruit tree is known as bath gasa (\u201crice tree\u201d). Sri <\/span>Lankans are rice eaters and pre-colonial Sri Lanka took pride in the <\/span>country\u02bcs vast reservoirs and irrigation canals that harnessed monsoon<\/span>
\nrains, suppling water for paddy cultivation. But when British forces <\/span>occupied the island starting in 1815 and subsequently stripped farmers <\/span>of their land, they made it difficult for islanders to grow rice and instead <\/span>expanded plantation crops such as tea, rubber and cinnamon for their <\/span>export gains.<\/span><\/p>\n

 <\/p>\n

In 1915, a member of Sri Lanka\u02bcs independence movement named Arthur <\/span>V Dias, who had been sentenced to death by the British for his perceived <\/span>role in an uprising, was freed from prison. Upon his release, Dias <\/span>dedicated himself to helping Sri Lankans fight British rule and he realised <\/span>that islanders would soon face food shortages as rice cultivation <\/span>continued to decline. During his independence movement marches in Sri <\/span>Lanka\u02bcs central highlands, he also saw the destruction of the island\u02bcs <\/span>native jackfruit trees. When he learnt about the harrowing food shortages <\/span>caused by World War One across Europe, Dias sought to establish food<\/span>
\nsecurity and self-sufficiency throughout Sri Lanka.<\/span>

\n\u201cOne person can\u02bct build a tank for paddy cultivation, but Arthur V Dias <\/span>realised he could plant jackfruit trees, which [would] be the same as rice <\/span>and eradicate starvation in Sri Lanka,\u201d said Damith Amarasinghe, a <\/span>history teacher at St Mary’s Maha Viduhala in the town of <\/span>Uswetakeiyawa.<\/span><\/p>\n

Dias came up with the ambitious goal of planting one million jackfruit <\/span>trees across Sri Lanka. A planter by trade, Dias imported jackfruit seeds <\/span>from Malaysia and gathered healthy seeds for germination. He visited <\/span>villages to distribute seedlings and mailed seeds to far-flung corners in <\/span>the country. Over time, Dias\u02bc campaign paved the way to many <\/span>successful jackfruit plantations across the country and earned him the <\/span>heroic nickname of Kos Mama, or Uncle Jack.<\/span><\/p>\n

Today, Dias is considered a national <\/span>hero, and like most Sri Lankan <\/span>children, I first learned about Dias in a school textbook. His jackfruit <\/span>campaign also helped establish food security in Sri Lanka during World <\/span>War Two while nearby places such as Bengal and Vietnam experienced <\/span>horrific famines in the 1940s. Amarasinghe explained that jackfruit was <\/span>also known as the \u201cstarvation fruit\u201d in Sri Lanka during the 1970s, <\/span>fleetingly transferring me to my mother\u02bcs memories of her childhood.
\n<\/span>
\nIn the 1970s, a combination of inflation, droughts and a food shortage <\/span>pushed Sri Lanka to the verge of collapse. A 1974 New York Times article <\/span>quotes Sri Lanka\u02bcs then-prime minister Sirimavo Bandaranaike as saying<\/span>
\nJackfruit has birthed a host of flavourful <\/span>delicacies, and we welcome every bit of it <\/span>into our diverse cuisine <\/span>the dire economic situation has \u201calmost squeezed the breath out of us \u2013 <\/span>we are literally fighting to survive\u201d.<\/span>
\nBut thanks to Dias\u02bc campaign in the early 1900s, people had jackfruit <\/span>growing in their backyards. Amarasinghe explained that those saplings \u2013 <\/span>which had become tall, fruit-bearing trees long before the 1970s \u2013 are <\/span>what got people through the crisis.<\/span><\/p>\n

\u201cMy grandmother hailed from a well-to-do family, but the government <\/span>only allowed them to purchase 2kg of rice for a week. During these years, <\/span>it\u02bcs jackfruit that kept them fed,\u201d Amarasinghe told me.<\/span><\/p>\n

Most recently, Amarasinghe says <\/span>that jackfruit also became a staple <\/span>during Sri Lanka\u02bcs months-long <\/span>curfew to control Covid-19. During the initial weeks of the pandemic, <\/span>many people in rural villages lost their incomes and it took weeks or even <\/span>months for government welfare programmes to reach these remote <\/span>hamlets. Without access to money or food, many villagers resorted to <\/span>boiling jackfruit \u2013 just as my mother\u02bcs family did in the 1970s.<\/span><\/p>\n

But jackfruit isn\u02bct just a starvation fruit. The island\u02bcs deep love and <\/span>gratitude for jackfruit has birthed a host of flavourful delicacies, and we <\/span>welcome every bit of it into our diverse cuisine. Tender baby jackfruit <\/span>without seeds go into a flavourful curry known as polos ambula. The <\/span>curry\u02bcs labour-intensive process involves slow cooking the young fruit in <\/span>a clay pot over an earthen fire for at least six hours. As the hours pass, <\/span>the baby jackfruit slices simmer in a spice-infused coconut broth, <\/span>soaking up the flavours of cloves, cardamom, dried tamarind and other<\/span>
\naromats.<\/span><\/p>\n

Ripe jackfruit pods are slimy and taste better with a sprinkle of salt. <\/span>Seeds don\u02bct go to waste in our homes; we eat them boiled. When <\/span>combined with a ground mix of pan-fried rice and shredded coconut, <\/span>boiled seeds make for a dark curry called kos ata kalu pol maluwa. My <\/span>mother loves seeds as a snack, smoking them over a charcoal fire. My <\/span>favourite is my father\u02bcs kos ata aggala, pan-roasted and ground jackfruit <\/span>seeds blended with scraped coconut, sugar and a hint of pepper that are <\/span>formed into balls for sublime taste and a subtle crunch. He makes them<\/span>
\nfor evening tea when I\u02bcm home as a token of his love.<\/span><\/p>\n

This jack-of-all-fruits\u02bc versatility runs beyond the kitchen. \u201cIt\u02bcs hard to <\/span>think of another tree with so many uses,\u201d said Diwani Welitharage, a <\/span>pharmacist who cooks with locally sourced ingredients in her spare time. <\/span>Welitharage cites jackfruit trees\u02bc popularity as timber and the many uses <\/span>of its leaves and flowers in Ayurvedic medicine to treat diabetes. Rich in <\/span>carbs, jackfruit is also a good source of dietary fibre and vitamin C.<\/span><\/p>\n

 <\/p>\n

Welitharage uses jackfruit flour in muffins and cakes, and fries sliced <\/span>jackfruit pods into chips laden with sugar. Similarly, many Hela Bojun <\/span>restaurants \u2013 an initiative by the Ministry of Agriculture allowing women to <\/span>cook traditional Sri Lankan cuisine and earn a living \u2013 prepare kos kottu. <\/span>Kottu, a popular street food and hangover cure, is a greasy mix of leftover <\/span>flatbread, sliced vegetables, eggs and meat. The female-run Hela Bojun <\/span>stalls dish up a healthier vegan kottu using boiled jackfruit pods.<\/span><\/p>\n

Though jackfruit is traditionally cooked at home, this humble fruit is <\/span>increasingly found in many upscale restaurants across the country. <\/span>\u201cOne day we had additional baby jackfruit, so I thought of preparing <\/span>cutlets [a croquette-like snack] with it for guests who are vegetarian or <\/span>vegan,\u201d said chef Wasantha Ranasinghe at Upali\u02bcs by Nawaloka, a popular <\/span>restaurant in Colombo that serves authentic local dishes. His tender <\/span>jackfruit cutlets, served with a homemade spicy chilli sauce, soon <\/span>became a hit among the epicureans frequenting the restaurant.<\/span><\/p>\n

Curious to see how jackfruit fares at hipster cafes, I visited the chic <\/span>Colombo restaurant Cafe Kumbuk, which plates tacos with fried baby <\/span>jackfruit alongside mango salsa and guacamole. \u201cLiving in Sri Lanka, I <\/span>realised jackfruit is such a widely available, versatile fruit that can be <\/span>cooked and enjoyed in so many ways,\u201d said cafe founder Shana <\/span>Dandeniya, who returned to Sri Lanka a few years ago after growing up in <\/span>the UK. \u201cTo me, it\u02bcs one of the greatest local superfoods we have access <\/span>to, and we should champion it more.\u201d<\/span><\/p>\n

She is particularly fond of the pulled pork-like texture in cooked jackfruit <\/span>and has plans to reintroduce a pulled jackfruit burger on the cafe\u02bcs menu <\/span>following customer requests. \u201cIt\u02bcs great when slow-cooked and pulled; I<\/span>
\nthink it\u02bcs even better than pulled pork.\u201d<\/span><\/p>\n

When I spoke to my mother again, she tempted me to visit my aunt in the <\/span>village for a bowl of creamy white kiri kos cooked over a woodfire and <\/span>enjoyed with a plate of hot rice and lemongrass-scented freshwater fish<\/span>
\ncurry. I can\u02bct recreate my aunt\u02bcs authentic flavours in my Colombo kitchen <\/span>with a gas stove, but I can visit her and then see my father for a token of <\/span>love that comes with his teatime kos ata aggala.<\/span><\/p>\n

Tender jackfruit cutlets recipe (makes approximately seven)<\/span>
\nFilling:<\/span>
\n1 young jackfruit<\/span>
\n100g potatoes<\/span>
\n2 tbsp coconut oil<\/span>
\n1 finely chopped onion<\/span>
\n2 finely chopped garlic cloves<\/span>
\n1 finely chopped green chilli<\/span>
\n\u00bc tsp finely chopped ginger<\/span>
\n\u00bd tbsp ground pepper<\/span>
\n\u00bc tbsp chilli flakes<\/span>
\n1 tbsp roasted curry powder<\/span>
\nfinely chopped 2 sprigs of curry leaves<\/span>
\nsalt to taste<\/span>
\nBatter:<\/span>
\n50g wheat flour<\/span>
\n150ml water<\/span>
\npinch of turmeric<\/span>
\npinch of salt<\/span>
\n150g breadcrumbs<\/span>
\nClean the young jackfruit, and then peel and cut it into medium-sized<\/span>
\nchunks. Boil until soft, and mash.<\/span>
\nBoil the potatoes, and then peel and mash them.<\/span>
\nHeat the coconut oil in a shallow pan. Once the oil is hot, add onions, <\/span>garlic cloves, green chilli, ginger, pepper, chilli flakes, roasted curry <\/span>powder and chopped curry leaves. Saut\u00e9 until onions turn tender and <\/span>light golden in colour. Add salt, the mashed jackfruit, and potatoes and <\/span>stir well for five minutes. Switch off the heat. Once cool, shape the <\/span>mixture into small balls about 1.5in in diameter.<\/span>
\nPrepare the batter by whisking together the wheat flour, water, turmeric <\/span>and salt.<\/span><\/p>\n

Dip the balls in the batter and roll them in breadcrumbs. <\/span>Heat a pan with oil and fry the cutlets until golden brown. Serve them <\/span>with a spicy chilli sauce.<\/span>
